Recipe: Honey-Mustard Salmon

Here’s a tasty last-minute dish that’s easy to prepare and even easier to clean up (especially if you remember to put aluminum foil in the broiler pan first). Just 7 minutes in the oven, and voilà!

  • 4 salmon fillets, about 6 oz. each, with skin
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. honey
  • Salt and pepper (to taste)
  • Small bowl

Preheat broiler. In a small bowl, mix together mustard, honey, salt, and pepper with a fork. Place salmon skin-side down on broiler pan and brush with honey-mustard mixture. Broil about 5 to 7 inches from heat source for about 7 to 8 minutes or until fish flakes with a fork. Serves 4.

Preparation Time: 10 minutes

Cooking Time: 7 to 8 minutes

ORANGE CRANBERRY MUFFINS

  • 1 batch of AP Crème Cake Mix (#1823), made per package instructions but with orange juice instead of water
  • Fresh frozen Dole or Wyman’s Cranberries

Add desired amount of cranberries to batter. Bake as directed on bag.

Kathy (AP rep who shared this recipe) also recommends freezing the cranberries in smaller freezer bags to retain freshness, and for easy use in recipes.

FLUFFY FROSTING

  • 3 1/2 cups powdered sugar
  • 1/2 cup butter
  • 1 tsp. vanilla
  • 3-4 Tbsp. milk, use more to thin if desired
  • 1 tsp. Powdered Flavoring, if desired

Beat all ingredients to desired consistency.

HEALTHY BLUEBERRY SMOOTHIE

  • 1 cup Wyman’s frozen Wild Blueberries (#5614)
  • 7 oz. vanilla yogurt
  • 1 Tbsp. lemon juice
  • 2 Tbsp. orange juice
  • 1/2 tsp. vanilla
  • 1/2 cup ice

 Blend ingredients in blender until smooth.

Unbelievable Peanut Butter Cookies

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla

Combine all ingredients.  Drop onto an ungreased cookie sheet.  Flatten with a fork

Bake @ 325 for 14-16 minutes.

Let cool for 1-2 min on cookie sheet before moving.  Makes  30
