Recipe: Honey-Mustard Salmon

Here’s a tasty last-minute dish that’s easy to prepare and even easier to clean up (especially if you remember to put aluminum foil in the broiler pan first). Just 7 minutes in the oven, and voilà!

  • 4 salmon fillets, about 6 oz. each, with skin
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. honey
  • Salt and pepper (to taste)
  • Small bowl

Preheat broiler. In a small bowl, mix together mustard, honey, salt, and pepper with a fork. Place salmon skin-side down on broiler pan and brush with honey-mustard mixture. Broil about 5 to 7 inches from heat source for about 7 to 8 minutes or until fish flakes with a fork. Serves 4.

Preparation Time: 10 minutes

Cooking Time: 7 to 8 minutes

Please untie the knots
that are in my mind,

the can nots and the do nots
that I have in my mind.

might nots that may find

ORANGE CRANBERRY MUFFINS

  • 1 batch of AP Crème Cake Mix (#1823), made per package instructions but with orange juice instead of water
  • Fresh frozen Dole or Wyman’s Cranberries

Add desired amount of cranberries to batter. Bake as directed on bag.

Kathy (AP rep who shared this recipe) also recommends freezing the cranberries in smaller freezer bags to retain freshness, and for easy use in recipes.

FLUFFY FROSTING

  • 3 1/2 cups powdered sugar
  • 1/2 cup butter
  • 1 tsp. vanilla
  • 3-4 Tbsp. milk, use more to thin if desired
  • 1 tsp. Powdered Flavoring, if desired

Beat all ingredients to desired consistency.

HEALTHY BLUEBERRY SMOOTHIE

  • 1 cup Wyman’s frozen Wild Blueberries (#5614)
  • 7 oz. vanilla yogurt
  • 1 Tbsp. lemon juice
  • 2 Tbsp. orange juice
  • 1/2 tsp. vanilla
  • 1/2 cup ice

 Blend ingredients in blender until smooth.

Unbelievable Peanut Butter Cookies

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla

Combine all ingredients.  Drop onto an ungreased cookie sheet.  Flatten with a fork

Bake @ 325 for 14-16 minutes.

Let cool for 1-2 min on cookie sheet before moving.  Makes  30

I grew up with practical parents. A mother, God love her, who washed aluminum foil after she cooked in it, then reused it. She was the original recycle queen, before they had a name for it… A father who was happier getting old shoes fixed than buying new ones.

Their marriage was good, their dreams focused. Their best friends lived barely a wave away..

I can see them now, Dad in trousers, tee shirt and a hat and Mom in a house dress, lawn mower in one hand, and dish-towel in the other. It was the time for fixing things.. A curtain rod, the kitchen radio, screen door, the oven door, the hem in a dress. Things we keep.

It was a way of life, and  sometimes it made me crazy.. All that re-fixing, eating, renewing, I wanted just once to be wasteful. Waste meant affluence. Throwing things away meant you knew there’d always be more.

But then my mother died, and on that clear summer’s night, in the warmth of the hospital room, I was struck with the pain of learning that sometimes there isn’t any more.

Sometimes, what we care about most gets all used up and goes away…never to return.. So… while we have it….. it’s best we love it…. and care for it… and fix it when it’s broken……… and heal it when it’s sick.

This is true. for marriage……. and old cars….. and children with bad report cards….. and dogs with bad hips…. and aging parents….. and grandparents. We keep them because they are worth it, because we are worth it.

Some things we keep. Like a best friend that moved away or a classmate we grew up with.

There are just some things that make life important, like people we know who are special…….. and so, we keep them close!

Good friends are like stars…. You don’t always see them, but you know they are always there.  Keep them close!

Positive…

I get email quite often from people stating how they love my positivity.  I think about it a lot because my life has seemed to be consumed by negativity – I just want to say thank you to everyone…it is the thoughtfulness of friends and people that I correspond with that reminds me – my day can be or it can be bad and it all depends on how I want to view it, it is all MY own attitude.  If I choose to be negative about things then I will really affect everyone in a negative way including myself (health, spirituality…) and if I choose to look at things in a positive way – well good things take place and I feel great – it is like paying it forward…when you walk around with a smile on your face and saying hi to anyone and everyone – they may think you are weird but they will also remember being smiled at – a warmth shared between you and the lucky recipient of your love and happiness!  So, I guess this has just been on my mind.  I believe that one of the gifts God gave me was the gift of forgetting – I can get hurt and really after a good night sleep and a new outlook and prayers to God, I am good – nothing can get me down!  I love that I have a fresh outlook on life every day!  Forgive and forget…

Friends…the best of them give the greatest gift…

Today I had the pleasure of speaking with a good friend via text and an actual phone conversation.  It is wonderful to laugh and be fun!  There is nothing like the gift of a smile – it lightens the soul and lifts the spirits and brings this peaceful easy feeling over ones heart that is beautiful.  Don’t forget to share a smile with someone today.  Thanks Frank!

Every day I must refresh my mind, spirit and body.  I find that I have to continually seek His face in all things because without Him I will wander as I have in the past.  There is no person greater than God and no person that I need more than God.  He is my everything and He is my sole provider.  As I walk through this day I ask for guidance, grace and mercy in all I do – help me to stay on track and focused to your will.
